My Granny's Cornbread Recipe
Now this isn't some healthy, skinny version....this recipe might put a little meat on your bones. I think it's worth every bite...in small doses of course.

(but this isn't one of those recipes you follow by the book....it's one of those that you add "a little here or there" to get the batter the right consistency. I would get so frustrated when I would call her from college and ask her how to make it. She could never give me the exact measurement. She would always say, "just enough buttermilk till it looks like pancake batter." I understand that now better than ever, as this is a regular item on our weekend menu.
I tend to make it anytime there is a pot of chili, soup or pinto beans on my stove or in my crock pot.
Ingredients:
1 2/3 Cup Yellow Cornmeal (self rising)
1 cup of flour
1 egg
1 1/2- 2 cup of buttermilk...enough to make the batter runny like pancake batter
***sometimes i will add 1/4 to 1/2 cup sugar. i like it sweet, but the Hubs doesn't. it's fine without it.
Directions:
- Preheat over to 425 degrees. .
-place cast iron skillet in oven as oven is preheating with a spoonful of shortening in
it to coat the pan. (it will melt during preheating)
- while oven is preheating, mix the above ...should be runny/lumpy
-pour mixture into hot skillet
- place skillet in the over for about 20 -25 min. i usually start checking mine at 15-20 mins to make sure i don't burn it. you want the top to be a nice golden brown color.
-you can always use a toothpick to check it... just poke in center of cornbread and just a few crumbs should come out if done.

This is almost the exact same recipe as my grandmother shared with me! I even use her cast iron skillet to cook it in :)
